1 each - onion, celery and carrot, chopped
1 tbs flour
2 cups vegetable broth
1 14 oz can chopped tomatoes
2 small potatoes, chopped
1 package frozen mixed vegetables
Salt and pepper
Saute vegetables in olive oil until golden.
Add flour and cook for 2 minutes.
Add broth and tomatoes. Bring to boil
Add frozen mixed vegetables.
Simmer until potatoes are soft.
Season with sal and pepper.
